Since 1991, Dr. Canfield has taught nutrition at both graduate and undergraduate levels, as well as in continuing education seminars for dietitians.
Courses include "Nutrition and Aging" and "Nutrition and Cancer Prevention." She has also published numerous studies and abstracts in peer-reviewed journals such as Journal of the American Dietetic Association and Anticancer Research.
Dr. Canfield has served as educator and Director of Nutrition at the Pritikin Longevity Center since 2005. Pritikin's residential program is based on daily exercise and natural whole foods such as fruits, vegetables, whole grains, seafood, and limited lean meat.
