When chef James Smith was growing up in Australia, his family cooked mostly with whole foods. He's carried that practice into his culinary career, now looking at clean eating from a sustainability point of view, as well as for overall health and longevity.James suggests eating with the seasons. He's finding that individuals are reconnecting to farmers and farming regions, cooking more at home, and making mealtime a family affair. In November of 2014, James was appointed as the first-ever Chair of Culinary Programs and Operations for Centennial College.He also heads up a nutrition-based culinary program, which focuses on more than just making great tasting food. The program teaches the skill of cooking and the philosophy of clean eating.
